Made with dried orange peel, this spicy dish is from the Hunan region. I came up with thisBeef with Dried Orange Peel recipe by attempting to duplicate a dish at a local Chinese restaurant. My family thinks it tastes even better than the original. Feel free to deep-fry the beef twice if desired to make it extra crispy.

Ingredients for Beef with Dried Orange Peel recipe:
500 grams (1.1 lb) tender beef
25 grams (5/6 oz) dried orange peel
3 grams (1/10 oz) sliced ginger
5 grams (1/6 oz) sectioned scallions
10 grams (1 1/2 tsp) soy sauce
25 grams (1 3/4 tbsp) cooking wine
5 grams (1 tsp) sugar
2 grams (1/3 tsp) salt
15 grams (1 tbsp) cooking oil
Directions to cook Beef with Dried Orange Peel:
1, Slice the beef to about 3 cm (1.2 inches) long, 1.7 cm (0.6 inch) wide and 0.3 cm (0.12 inch) thick and mix with the cooking wine, soy sauce, salt, scallions, ginger and orange peel. Place in the refrigerator for 1 hour.
2, Heat the oil to about 70-100 ºC , add in only the beef slices and keep stirring and turning until all the moisture is gone. This process takes as long as 20 minutes after which the beef slices become crispy and produce an attractive aroma.
3, Now add the orange peel, scallions, ginger, sugar and mix well. Dish up and this Beef with Dried Orange Peel dish is ready to serve.
